Breakfast Cocktails was exactly what he said when he saw my little Sunday morning bircher which followed on from Saturday night cocktails. This is one of my favourite breakfasts, it’s super smart, nice and easy. It makes you look a dab hand in the kitchen when all you need is a little forward planning! I love this because it’s totally dairy free but doesn’t skimp on a creamy satisfaction. (I’m having a bit of a dairy free push in an attempt to clear my skin before Christmas)
Blueberry and Coconut Bircher
(4 servings can be popped into the fridge and stored for a few days and it’s totally delicious)
250g Soya yogurt
150g Jumbo organic oats
1 Granny Smiths apple(Cored and grated)
80ml Alpro Original Coconut drink
¼ tsp cinnamon (or to taste)
30g pistachio nuts roughly chopped
1. Place oats, grated apple, cinnamon, yogurt and coconut drink in a bowl. Stir the mixture cover and place in the fridge over night, leaving to soak.
2. Scoop into bowls and sprinkle with pistachios and blueberries to serve.
I put ours into cocktail glasses to make them look pretty and because we had friends over and it was a Sunday. Needless to say a bowl will do the same job and it’s a crummy snack if you pop it in a lunch box.
