Breakfast is the most important meal of the day and this is why I sometimes have it for lunch too. This is such a simple recipe you could have it before work or like I have a quick lunch.

This tasty little number is packed with protein, energy and plenty of goodness provided by the Shiitake Mushrooms. Shiitakes are well known for their health benefits, they contain a special chemical compound which protects our DNA from oxidative damage also known as toxins. Shiitakes also help reduce cholesterol levels and support cardiovascular health. These magic mushrooms support our immune systems, boost energy levels and provide Vitamin D!

Ingredients:

2 eggs

A large handful of Shiitake Mushrooms (or 2)

1 red onion

I dessert spoon of coconut oil

Nutmeg, salt & pepper to taste

Bacon and cayenne pepper (Optional)

Method:

First of all heat the coconut oil and finely slice the red onion, gently sauté the onions with a little salt for a few minutes. Meanwhile slice the all important Shiitake Mushrooms, add them to the pan along with a sprinkle of nutmeg and continue to cook on a medium heat until soft.

While this is cooking whisk the two eggs and place the bacon if you wish to use it under the grill.

Then remove the mushroom mixture from the pan and place in a bowl to one side. In the now empty pan pour in the whisked eggs, allow to cook for a minute or two until solid. Place the mushrooms on one side of the omelette and then fold it in two. (A bit like a floppy taco.)

Slide onto you plates carefully so as to keep it looking pretty. Top with crispy bacon, pepper and a sprinkle of cayenne if you like a bit of a kick.
