This is not one for the faint hearted, dizzy with carb overload and totally guilt-free. A winning combination for a post-workout refuel, especially post workout on Shrove Tuesday. This little pancake fix gives slow release energy (Low GI) and also provides a healthy dose of protein.

Gluten-free Pancakes:

Serves 2 big eaters!

250g Ricotta cheese

120g Organic rolled oats

4 Organic eggs

2 teaspoons ground cinnamon

Method:

  1. Blitz all ingredients in a food processor into a smooth batter.
  2. Heat a non-stick pan, ladle in a few large spoonfuls of the mixture and cook for a few minutes on each side. Tip: make sure the outer edge is golden before you attempt the toss!
  3. Serve warm with fresh berries, a scoop of plain yogurt or a squirt of date nectar. Date nectar is an alternative to sugar but in essence it is still a sugar so be warned. (Treat it like a treat and no different to the white stuff!)
